Ian’s Breadfruit Crab Cakes
- 1 large or several small mature (but not soft) breadfruit
- 2 or 3 fresh jalapeno chilies
- 1/2 to 1 pound fresh crab meat (or steamed fish, flaked)
- 1 large Kula onion, diced
- 1/3 cup chopped cilantro
- 1/3 cup grated Parmesan cheese
- 3 or 4 teaspoons red pepper flakes or to taste
- 2 or 3 teaspoons Old Bay seasoning or to taste
- Hawaiian salt
- Juice of 2 or 3 limes
- Splash of beer
- Peanut or sunflower oil
Dipping sauce
- 2 or 3 tablespoons ponzu sauce
- 1 cup plain yogurt
- 3 or 4 teaspoons wasabi powder or totaste
Preparation
- Steam breadfruit thoroughly.
- Roast jalapenos on grill or cook in a pan over medium heat until they begin to “sweat,” then dice.
- In a bowl, combine crab, onion, cilantro, cheese, jalapenos, red pepper flakes, Old Bay seasoning, generous amount of Hawaiian salt, lime juice and beer; set aside.
- Cool breadfruit enough to handle, but while still warm, cut chunks from skin and add to bowl with crab mixture.
- Coat hands lightly with oil; then knead mixture thoroughly until a uniform consistency is achieved.
- Form into cakes, stack them on a plate and cover with a damp towel.
- In a cast-iron skillet or good pan, heat one-quarter inch of peanut or sunflower oil.
- Cook crab cakes until golden brown, and place in oven set at 200 degrees to keep warm until serving.
- Mix dipping-sauce ingredients.
If making ahead of time, wasabi becomes more potent the longer it sits.

AAA was contacted by HIOSH (Hawaii Occupational Safety and Health) in November about putting on a tree care safety workshop together because of the increase in the number of deaths in the industry (3 in 2011, 5 in 2010-2011). The workshop will take place on Friday March 16th and will be held on the University of Hawaii Maui Campus. Kevin Eckert of Arbor Global will be the primary speaker along with 1-2 representatives from HIOSH. 6 CEUs will be available for the all day workshop. HIOSH strongly encourages tree care contractors and landscapers to attend the workshop and mail it to the applicable companies.
At the workshop, participants will be provided with
1. Food (generally breakfast pastries and lunch)
2. Drinks (Coffee, bottled water)
3. One copy of the ANSI Z133.1 (2006) – tree care safety standard

Bring a soil sample for pH testing by UH Hawaii Maui Campus Ag Department.
Bring a sick plant sample to have diagnosed by a plant pathologist from CTAHR Cooperative Extension Services.
Bring pest samples in sealed container for identification and advise.

Our 19th annual irrigation class will be held on 6-18-11 on the west side at 105 Ala Hoku Pl. (Friendly Isle Landscape base yard – CLICK for MAP) the class will focus on irrigation troubleshooting, repair and basic hydraulics. The class is open to all entry level and intermediate level irrigation technicians. The following will be covered:
- Controller diagnostics
- Electric Valve repair
- Backflow Repair
- Field wiring diagnostics
Each student should brig a small socket set, screwdriver; slotted and Phillips, and a voltmeter. All students will do hands on troubleshooting and repair so come dressed accordingly.
Class size is limited to the first 20 students to register. Refreshments and lunch will be provided. Please register early.

A test was conducted at Waiehu Municipal Golf Course to evaluate the efficacy of several herbicide combinations with Roundup, Revolver, MSMA, and Sencor to control herbicide resistant goosegrass using 2 spray applications at 2 weeks apart. You are invited to a field day to observe the results of this test.
